Simone Apostoli is an Italian chef trained in his country’s culinary arts, which he said gives him a distinct advantage when it comes to crafting new dishes.
It was Chef Simone’s willingness to try anything that lead to Bowery House’s most popular dish, the chicken apple sausage ravioli.
Chef Simone also gave me few tips for those of us that want to make ravioli in our homes. Most important, if you don’t make it by hand at least buy handmade.
